Easy Mediterranean Fish Recipes with ‘Lemon Butter Caper’ Sauce
It took a few tries, but I’ve been doing lots of cooking during the quarantine, and I think I finally nailed the “lemon butter caper sauce.” Here are some easy Mediterranean fish recipes I made using my Staub 2-in-1 Grill Pan & Cocotte from Food52. Monkfish

I loosely followed this recipe for Easy Mediterranean Baked Fish by the Midwest Foodie. But, this popular New York Times recipe by Florence Fabricant for Monkfish With Caper Butter is very similar.
Just a tip… The capers provide all the salty flavor you could possibly need. Don’t use salt to cook these recipes.
Pan-Seared Fish

I don’t have a specific recipe for this dish, but it was very easy to throw together, especially after being on a fish kick. First, I boiled my pearled couscous, which can be substituted with any pasta or rice. Then, I seasoned my white fish with cracked black pepper and cooked it up in some olive oil. Feel free to take some creative freedom and just choose any white flaky fish. After plating the food, I threw on the kalamata olives and some other green olives that I had in the fridge.
Broiled Tilapia

I was inspired by some of these recipes when looking for easy fish dishes to make for dinner on a weeknight. And it was the perfect recipe to try out my new Staub cookware from Food52 for the first time. The fish cooked up top while the couscous boiled down below.
Baked Cod & Kalamata Olives

This was a super simple recipe from Savory magazine, a Stop & Shop publication, that only called for five ingredients. And while the recipe doesn’t specify which butter to use, I recommend Kerrygold Salted Irish Butter. While it wasn’t very flavorful, I loved that it was an easy, healthy meal for dinner. Suggested Wine Pairings
Here are some of the wine pairings I suggest with these recipes. I tend to stick with white wines when enjoying a fish dish, especially white fish. Something like salmon for dinner is a different story.
