My Power Salad
Hey hey! Here’s the “recipe” for the super colorful, protein-packed salad on my Instagram feed. FYI… There’s no real recipe because I barely follow them. This salad was inspired by a picture of a dining room set on Pinterest that happened to have a pretty salad in a bowl. Anyways, it’s basically some of my favorite veggies, beans, raw tuna, and a couple of hard-boiled eggs. The base of my salad bowl is a combination of mixed leafy greens and arugula. I never eat romaine lettuce anymore, after getting e coli from a bad salad a few years ago. And this is a list of the goodies I used to decorate the lettuce. If I have a specific brand to recommend, there is a sub-bullet present. Most of my salad ingredients came from my local ShopRite, but some are also available through Amazon.
