Pork Tenderloin with Mushroom Pan Sauce

The Recipe

Another easy dinner for the books! This recipe features some juicy pork tenderloin smothered in mushroom pan sauce.

I discovered the recipe for Pork Tenderloin with Mushroom Pan Sauce in a Stop & Shop magazine available for free at checkout. I tried so many recipes from this magazine since the Summertime. And to be completely honest, I didn’t like any of them because they just lacked flavor. This was the first recipe I tried from that magazine and I really enjoyed the meal. It was tasty and easy enough to throw together quickly.

This is one of the few recipes that stuck out to me immediately because I love easy dinners and they only call for 5 ingredients. How hard could it be, right? So here’s the tea on the ingredients for this newly found recipe.

Ingredients

So here are the five ingredients you’ll need for this recipe. Ingredients can be shopped easily through the linked banners in this blog post. I sourced my ingredients from various places, so they didn’t come from Stop & Shop, but that’s mostly because I live closest to a Shop Rite. The pork came from my recent Butcher Box delivery, which I’ll explain more about later. And like pork tenderloins, the Baby Bella mushrooms are easy enough to find at your local grocery store. Just sharing a quick note on the mushrooms… They’re usually a couple of bucks cheaper when you buy the whole mushrooms, but then you have to cut them up yourself. Slicing mushrooms only takes a few minutes, but it can seem very time consuming when you’re trying to put dinner on the table after a late night at work. I usually have canola oil in the pantry, but heavy cream and white wine are two ingredients that I rarely cook with, so that was new for me.

Substitutes

As usual, I took a few liberties with this recipe. I swapped out canola oil with extra light olive oil for a healthier option, which is available on Amazon Pantry and your local Whole Foods, which can be shopped on Amazon. Of course, most of these items are available at your local grocery store, but if you still don’t feel comfortable going out due to COVID-19, the option for food delivery is there for you. I used Primus Pinot Grigio from this month’s Winc delivery because I didn’t have white wine specifically for cooking. Not sure if it makes a huge difference, but I’ll let you know when I make this recipe again with white wine that is actually meant for cooking with.
