Our Take on Sweetgreen’s Harvest Bowl
Here’s a recipe for a “warm salad” bowl… Perfect for healthy eating this time of year! It’s basically my customized version of the Harvest Bowl at Sweetgreen, but reinvented with some Maple BBQ grilled chicken, a balsamic-dijon dressing, and more.
Ingredients
Kale
Brown rice
Red delicious apple chunks
Grilled Maple BBQ chicken breast
Salted sunflower seeds
Roasted sweet potatoes
Dried fruit tart cherries
Crumbled goat cheese
No guidance on portions here, per usual, but you can always make a big bowl to last a few days as long. As long as you don’t pour any dressing on the salad, it’ll stay fresh for a few days.
Recipe
For the chicken, I always recommend letting it marinate overnight, for the best possible flavor. I prefer boneless, skinless chicken breasts, but thighs tend to be more popular because they don’t dry out as easily and hold more flavor.

When sautéing the kale, brown some garlic in the pan first for added flavor. If you’re super health-conscious, feel free to opt-in for the unsalted sunflower seeds and unsweetened dried fruit toppings.
