Our Take on Sweetgreen’s Harvest Bowl

Here’s a recipe for a “warm salad” bowl… Perfect for healthy eating this time of year! It’s basically my customized version of the Harvest Bowl at Sweetgreen, but reinvented with some Maple BBQ grilled chicken, a balsamic-dijon dressing, and more.

Ingredients

  • Kale

  • Brown rice

  • Red delicious apple chunks

  • Grilled Maple BBQ chicken breast

  • Salted sunflower seeds

  • Roasted sweet potatoes

  • Dried fruit tart cherries

  • Crumbled goat cheese

No guidance on portions here, per usual, but you can always make a big bowl to last a few days as long. As long as you don’t pour any dressing on the salad, it’ll stay fresh for a few days.

Recipe

For the chicken, I always recommend letting it marinate overnight, for the best possible flavor. I prefer boneless, skinless chicken breasts, but thighs tend to be more popular because they don’t dry out as easily and hold more flavor.

Whatever your preference, I recommend checking out a “Classic” customized ButcherBox that starts at $149 per month. You can skip and schedule deliveries at your convenience and customize the meats that come in your box. I personally recommend the “Big Box” option that lets you select from about twenty different meats to fill your custom box and it’s the best value for 20-26 lbs of meat. New members receive 2 lbs of ground beef, 3 lbs of chicken thighs, and a 3+lb pork butt for free in their first box. Available until 1/20/22!

When sautéing the kale, brown some garlic in the pan first for added flavor. If you’re super health-conscious, feel free to opt-in for the unsalted sunflower seeds and unsweetened dried fruit toppings.

I marinated the chicken with McCormick Grill Mates Maple BBQ Seasoning, which is linked below, and Sir Kensington’s Balsamic-Dijon dressing.
