Zesty Lemon Orzo

I love the zesty flavor of this lemon orzo dish. It's super refreshing. And because it's made with orzo instead of rice, it's also pretty light. This dish is easy to make and should take no longer than 20 minutes. Here's the recipe!


Directions: Simmer 1 cup orzo in a saucepan with 2 1/2 cups water, 2 tablespoons olive oil, 1 teaspoon dried mint, 1 teaspoon salt, 1/2 teaspoon paprika, and 2 strips lemon zest. Stir occasionally, until the orzo is tender, which should take about 12 to 15 minutes. Let cool slightly. Stir in 2 chopped scallions, the juice of 1 lemon, and salt to taste (optional).


Oh you fancy huh? Throw in some sliced lemons to decorate the dish.

Tip: I only used 1 tablespoon of olive oil and skipped out on the salt.
